I can't believe it has been 2 weeks since my last post.....guess I have been busy!!!
I finally puttered around in the yard a bit, here is an update on my baby pineapple......getting soo big!!!
The Mourning Doves are nesting again under the patio cover, in the Staghorn. I haven't been able to catch her gone so I can look in the nest. They are such good parents.
I cleaned out the freezer last week and I found about a dozen bananas I had thrown in the freezer because they were too ripe for my liking. I like my bananas with a tiny bit of green still on them. I will still eat them if they have a couple freckles, but only a couple. Much beyond that they are saved for Banana Bread. I had heard in the past to peel the bananas and put in a ziplock bag. Well, I tried this once a long time ago and they had turned such a nasty dark color, I threw them away. My sister told me to put them in the freezer peel and all. Well, that worked soo great!!!! I took them out and set them on the counter to thaw. When I was ready for them, I just tore the top off and squeezed the banana into the bowl. It was still a nice yellow color....there was a little bit of water from the ice melting, but it still worked great in the recipe. I made the recipe a little healthier by replacing the butter with applesauce and I only used 1/2 the sugar. The bread turned out plenty sweet and moist....YUM!!!
I have started eating more raw foods, they are soo good for you. I got a recipe for Muesli. It can be expensive if you buy it pre-made. Plus it has alot of sugars mixed in. This recipe calls for Oat Flakes (oatmeal), Rye Flakes, Barley Flakes, Spelt Flakes, sunflower seeds, raisins, cranberries, rolled dates, chopped wanuts, Almond Meal. (it called for ground up Hazelnuts, but can't seem to find them, and Almonds are very good for you, so didn't think it would make that much difference.) This is a great cereal, very filling and all raw ingredients.
I just got a new book, Ani's Raw Food Kitchen. I've only had a chance to glance, but I am looking forward to digging in and and trying some of her recipes.....
Have you tried Zumba????? Oh My!!!! The gym is getting sign ups for those interested in taking a Zumba class. I had seen it for the first time when I was in Mexico. It is kind of a replacement for the old Aerobics type exercize. This is a fast paced dance workout to Latin music. The dance steps are a combination of Salsa, Ragae, Calypso, Merengue and Samba..... very fun!!!! very get up and move!!!! A friend from work bought a Zumba DVD workout program and we are trying to find a time when we can get together to learn these steps so when we do finally go to a class we will kinda know what we are doing...... hee hee
Guess I HAVE been busy.........better to be busy than bored.
Hope you have a great weekend!!!
