A little pie??

I love little things, little bite sized foods.  They are soo dainty and quaint.  Mini muffins, mini brownie bites, etc.
I have a lot of fresh fruit in the freezer and would love to have the space, so I was wondering about little bite sized, mini fruit pies......

I searched the internet and finally came up with a recipe that looked like something I could do.   The recipe called for using refrigerator pie crust from the store, which I was hesitant to use.   Well, I finally got some of this pre-made crust and thought I better give it a whirl........ blueberry, apricot and pineapple.


Then a batch of blueberry........

A crumb topping to add a bit of texture......bake for 25 minutes and you have little pies!!!!

A little fruit goes A LONG way, so I ended up runing out of store bought crust and making a crust that I use for my mini pecan pies that I make at Christmas..........it was a much better crust.......no more store bought pie crust for me!!!!
My next door neighbors were walking up the hill past the house and I decided to try my new creation on them........they immediately voted for the hand made crust, and I think we stood outside and ate at least 2 dozen pies........then another neighbor showed up so I had to send some pies home with him...... hee hee

So the pies were a big success, except that they don't keep well.   The crust got very soft.  They were still tasty, especially with ice cream, but not nearly as good as fresh from the oven.
But then again, what food isn't best fresh from the oven????

Now what to do with the rest of the fruit in the freezer?????

  1. Mmm, everything looks so yummy. I make the mini pecan things and use a cream cheese crust - they are Stve's favorites.

  2. Yum! I use store-bought crust all the time...I guess my taste buds are rather plebian at best! So glad you are enjoying your new home. I hope to post on my blog soon...I know, promises, promises!
