Along with all the cookies I have been baking, I thought I would try a couple Cake in a Jar recipes. I remember making these several years back when there were only a few recipes out there.....I found a site online that has LOTS of recipes.......credit where credit is due. :-)
I made Pumpkin Spice, Chocolate and Tropical Paradise........soo many more to try.....
I gave these as my gift to my friends at work and mailed a few away........
I have no idea if they turned out ok, no way to taste them unless I opened it.....sooo, for those of you who received a jar or two, please let me kow how they turned out......too dry......too wet.......yummy.......awful....... either way. That way I will know what to do for next time..... :-)
I have a great recipe to share with you for a Cranberry~Raspberry Relish.
I tried this at a Thanksgiving dinner and fell in love with it. I have made it twice since then and it has been a HUGE hit......I made it for the potluck at work and one of the guys at work was walking around with the bowl wondering who brought it and where he could "buy" it..... hee hee I gave him the recipe and he actually is going to make it. It is THAT GOOD!!!!
Ok, here goes:
Cranberry~Raspberry Relish
1 - pound fresh cranberries - chopped fine
2 -Tart Apples - like Granny Smith - peeled, cored and chopped fine
1 - 10-12 oz. package frozen raspberries - thawed and drained
1/2 Cup Orange Marmalade
1 Cup sugar
1 tsp. lemon juice or to taste
Using a food processor makes this job really easy. Chop the cranberries and apples, put in a bowl, add the raspberries, marmalade, sugar and lemon juice. Mix with a spoon until well blended. THAT'S IT!!!!
You can play with the amount of sugar, but I ended up adding just about a cup. If you make this, let me know how everyone likes it......
